Mathematical modeling in food processing

Abstract

Mathematical modeling in food processing has been used for process optimization and process development. This tutorial will cover the basic steps in food process modeling, current status of modeling research and various tools available for immediate use by the industry professional. Mathematical models on various food processing applications including but not limited to thermal processing, microwave processing, frying, and freezing will be discussed.
